With a name like Chalet Chocolat, it’s no surprise we are passionate about our chocolate. This French hot chocolate recipe is not for the impartial or faint-hearted. This is for the fiercely passionate, chocolate aficionado. The no-holds-barred chocolate junkie, for whom the very idea of a rich, warm cup of chocolate velvet slipping down our throats has us rushing out the door for our 70% bittersweet fix.
what you need
(makes two generous mugs)
- 300g of chocolate 70% cocoa minimum- chopped
- 300ml of milk
- 120g double cream
- Tsp of sugar
- Dash of rum for an adult kick
- 1/4 tsp chilli powder*
- Large bowl of whipped cream
What to do
Take a medium saucepan and place over a low heat. Whisk the milk, double cream, sugar, and optional chilli powder until tiny bubbles appear around edge of the pan. Remove the saucepan from the heat and stir in the chocolate until completely melted, them return the sauce to low heat for the chocolate to melt completely. As with the vin chaud, you cannot allow this chocolate velvet to boil. Serve warm, topped with lashings of whipped cream.
*optional, but delicious and will intensify the chocolate flavour to near ecstatic levels
